a.k.a. Road Trip 2009 - The "What We Ate" Edition

Somewhere in South Dakota my husband commented that we eat better when we're camping than when we're at home. I think he's right! Based on that comment, you might assume that we ate out a LOT during our road trip but we didn't... except for our road days. We hit many fast food joints on those to make things a little more interesting and fun for the kids. I would have just as soon stopped at a rest area and set up the grill to make a meal but oh well!

Many people have asked for recipe and meal recommendations for road and camping trips. This post is for y'all. (But the "y'all" is for Melinda.)

Monday - Drove from Bend, OR to Grand Teton NP, Wyoming
Lunch: DQ (in Vail, Oregon)
Dinner: Taco Bell (in Jackson, Wyoming)

Tuesday - Grand Teton NP
Breakfast: Eggs and fresh hash browns (Boo grated potatoes for me... YUM!)
Lunch: Grilled cheese
Dinner: Mac & Cheese with hot dogs

Wednesday - Yellowstone NP
Breakfast: Granola & yogurt
Lunch: Tortilla sandwiches
Dinner: Spaghetti

Thursday - Emma Matilda Lake, Grand Teton NP
Breakfast: Biscuits & gravy
Lunch: Sandwiches & oranges
Dinner: Creamy Chicken & Rice

Friday - Drive from Grand Teton NP to Custer SP, South Dakota
Breakfast: Cereal
Lunch: Arby's (in Casper, WY)
Dinner: Leftovers

Saturday - Custer SP & Mount Rushmore
Breakfast: Pancakes
Lunch: Grilled Smoked Steelhead, Cheddar & Cream Cheese Wraps
Dinner: Tater Cakes

Sunday - Custer SP (Sylvan Lake & Needles Highway)
Breakfast: Pancakes
Lunch: Quesadillas
Dinner: Sloppy Joes

Monday - Drive from Custer SP to Flathead Lake, Montana
Breakfast: Cereal
Lunch: MacKenzie River Pizza (in Butte, Montana)
Dinner: MacKenzie River Pizza (leftovers... yeah it was THAT good!!)

Tuesday - Flathead Lake, Montana
Breakfast: Cereal
Lunch: Wraps at Brookies Cookies (in Bigfork, Montana)
Dinner: Steak, chicken, grilled vegies and salad. Mini cherry pies for dessert. Thanks to our gracious hostess, Heidi! (And thanks for letting me cook in your beautiful kitchen!)

Wednesday - Glacier NP, Montana
Breakfast: Caramel french toast strata (Thanks, Kari!)
Lunch: Tortilla sandwiches
Dinner: Burgertown (in Bigfork, Montana)

Thursday - Silverwood Theme Park, Idaho
Breakfast: McDonald's
Lunch: Theme park food & ice cream... and foo foo slushy drinks from the swim-up bar in the lazy river for me!
Dinner: MacKenzie River Pizza (in Coeur d'Alene, Idaho)

Emergency food that didn't get eaten (and was returned to the pantry): two boxes of Hamburger Helper, Chef Boyardee Ravioli, and Spaghetti-O's.

Note that we don't have an RV... so it took a couple days of prep cooking and a LOT of dry ice to pull this off. It was totally worth it though. I am soooo full!! :-)
