Smothered

One of my family's favorite restaurants in town is Baldy's. And one of our favorite meals is their Smothered Fries. It's actually on the appetizer menu but it's a meal (or two) on it's own - a huge plate of crispy, hot fries topped with pulled pork, bbq sauce, and grated cheddar cheese. YUM!

But frankly, ordering up Smothered Fries for a family of five hungry people gets a little spendy. I figured it was worth a try to see if I could make them at home. Since I got a fryer for Christmas (thanks, Santa!) I knew the fries would come out well. I just needed to figure out the pulled pork. I found some cooking times and general information on "the Google" and while not "authentic" bbq... it worked pretty well and my crowd was happy!

There was even enough pulled pork left over to make some sandwiches at lunch time today. So I think this will be part of the regular rotation.



This Oregonian's Pulled Pork
4 lb pork roast (bottom or round; boneless or bone-in)
1 onion, sliced
3 cloves garlic, peeled and slightly crushed
1 small orange, peeled and sectioned (I used a little cutie)
whole allspice
whole cloves
crushed red pepper
salt & pepper
1-2 c water
your favorite bbq sauce

Place roast in large crock pot. Add onion, garlic, orange and seasonings. Fill with water until about 2/3 full (does not have to cover roast). Cover and cook on low for 8-12 hours. Remove roast from pot and discard juices, onion, garlic, oranges, and seasonings. Shred pork using forks, return to pot with liberal coating of your favorite bbq sauce. Add a little water if desired. Cook on high for 1-3 hours until flavors are blended nicely or you are just too hungry to wait another minute!

For smothered fries: Arrange (prepared) crinkle cut fries in a single layer on oven-safe plate. Cover with helping of pulled pork. Drizzle with bbq sauce. Sprinkle shredded cheddar cheese over top. Broil for 1-2 minutes until cheese is gooey. Enjoy!

For sandwich: Toast two pieces of your favorite bread. Scoop warm pulled pork onto bread, sprinkle with shredded cheddar cheese. Broil to melt cheese if desired. Optional topping ideas include more bbq sauce or cole slaw. Yummy!

Are you SERIOUS?! Three of the best food inventions EVER, all rolled into one ooey, gooey meal! I must try this. Or I'll come over and let you make it for me (and who thought to put an orange in the pork - genius!).

I love Baldy's. Is it low carb? By any stretch of the imagination?

Heidi - According to the nutrition information, there are 17g total carbs in the "golden crinkles" fries I used. Is that a lot?

Kina - hmm a little turnabout since usually I read YOUR blog and pine for some of the sweet thai shrimp pizza... or anything from paizano's, really!

Oh man... that sounds awesome!! I haven't had the smoothered fries yet at Baldy's. I'm still a huge fan of the BBQ wings and pulled pork sandwich.

I'm trying this recipe for sure this week. Thanks for sharing!
